On Tuesday, I had the amazing opportunity to takeover the Instagram pages of one of my favorite companies, Eggland’s Best. I’ve shared before about the ways that Eggland’s Best Eggs are better than ordinary eggs – they have 6x more vitamin D and 10x more vitamin E, among other benefits. We go through a minimum of two dozen eggs a week in the Hetrick house so this partnership is a perfect fit! I had so much fun sharing some new recipes and how I fit EB eggs into my diet.
If you missed the original takeover, you can catch-up on the Eggland’s Best Instagram page (@egglandsbest) or click “read more” below for a full recap!
EASY BREAKFAST HACK
I’ll admit to reheating eggs from time to time – especially when I’m traveling and have to pack them in a cooler and bring them to hotels. This little trick makes the perfect fluffy scrambled egg, even when reheated. I use them in my Make-ahead Southwest Breakfast Burritos, too.
Want to know the secret to the FLUFFIEST scrambled eggs in minutes? Whisk 2 @egglandsbest eggs together with 1/4 cup cottage cheese. Pour into the center of a pan on medium heat until the eggs begin to settle in the middle. Scramble until fully cooked. And the best part? These reheat well without losing their texture! I use these in my make-ahead Southwest Breakfast Burritos for a filling breakfast that’s ideal for busy mornings. – Ashley, @fitgirlinflight
CREPES FOR LUNCH? YES, PLEASE!
The Mr. and I were just laughing about how one of our favorite date night spots isn’t a fancy restaurant – it’s the 24 hour breakfast place a few blocks over. My dinner-of-choice there is a savory chicken crepe with spicy cream sauce that we’ve started to also try and replicate at home, with a twist. Start with a basic crepe recipe, like this one from the Eggland’s recipe archive. Skip the sugar to save on carbs and make the perfect savory crepe. Then fill with your favorite veggies + protein! Top with a savory sauce and you’ve got a dinner that looks as impressive as it tastes.
Lunch couldn’t be simpler. We had crepes for dessert over the weekend so for lunch, I sauteed up a savory filling of chicken, mushrooms, diced tomatoes, spinach, and garlic, wrapped that up in two remaining crepes, and then layered on some poblano hollandaise. Oh so good, and the poblano hollandaise adds the perfect amount of spice! What are you cooking up for lunch today? – Ashley, @fitgirlinflight
Ps. The recipe for this poblano hollandaise is coming soon – I promise!
DIY SNACK BOXES!
My lovely friend, Rebecca, from Happily The Hicks shared her DIY snack box on Instagram a few weeks ago, and I knew I had to make my own (she was kind enough to let me borrow her idea). They’re so easy to prep on a Sunday and carry as your afternoon snack all week, with lots of protein and healthy fats. Mr. H may have stolen most of these to bring to the office before I could claim mine!
Hungry for an afternoon snack? Step away from the leftover Halloween candy – and reach for a nutritious DIY snack box. This one has lean turkey, sharp cheddar cheese, raw almonds, veggie sticks, and of course, @egglandsbest Hard-Cooked Peeled Eggs. Did you know these have the same nutritional benefits as their shells eggs such as 6x more vitamin D and 10x more vitamin E? They’re super convenient and make making this DIY snack box even easier! – Ashley, @fitgirlinflight
QUICK DINNER IDEAS
We love bold flavors around here, but what I don’t love is spending hours cooking after a long travel day or a tough workout. These salmon burgers were an experiment a few weeks ago that turned out so well, they’ve become a dinner staple! And, this preggo is super happy with all of the nutrients and Omega 3 Fatty Acids they carry. They’ve even won over my anti-salmon husband!
Whether I just got off a flight or ended a busy day, I’d rather spend time with my family than cooking dinner. Thankfully these salmon burgers are packed with Omega 3s and can be whipped together in less than 20 minutes, complete with spicy aioli for an added punch of flavor. Mix 1lb salmon, 2 @egglandsbest Large Eggs, 1/2c bread crumbs, cilantro, garlic, ginger, and a little mustard in a bowl. Form into patties and cook in a grill pan until cooked through. 🍔 The aioli is just 2 EB egg yolks and sriracha (amount depends on how spicy you want it), slowly whipped together with ¼ cup olive oil until creamy. Enjoy! – Ashley, @fitgirlinflight
The aioli recipe is also likely to make a repeat appearance for burger + french fry Sunday night dinners in our house. More on that soon, too!
THAT’S A WRAP
Thank you so much for following along today as I share my love of @egglandsbest eggs – and hopefully give you some insights into why we run through a few cartons a week in this house! We’re capping off the night over here with some easy fruit-filled crepes made with EB eggs, of course. They hit all of my pregnant girl sugar cravings without all the extra calories of many desserts.
